You may feel like you stumbled into the alps…

When you walk into the quiet and romantic ambiance of The Edge, you may feel like you stumbled into some combination of a Swiss chalet, a German beer house, and a French bistro. And make no mistake, that is exactly where you want to be.  Tucked into The Timberline condominiums is The Edge. This quaint and cozy bar and restaurant serves handcrafted cocktails with house-infused spirits, authentic German beers, and a menu of some of the richest and most decadent alpine dishes you could possibly hope for.

Blueberry Lemonade – House infused blueberry vodka, lemonade, & simple syrup.

Craft barman JD Daleke maintains a meticulous bar. A carefully arranged array of mason jars are stocked with specific ingredients like imported cinnamon bark, brined olives, and other accouterments that allow him to mix together perfectly balanced cocktails.  On a cold cloudy day, try the Cinnamon Bourbon Cider (house-infused cinnamon bourbon, clove simple syrup, lavender bitters, and hard cider). On the warmest days of winter, top off your ski day with a Blueberry Lemonade (house-infused blueberry vodka, lemonade, & simple syrup). If its the middle of summer and you find yourself at The Edge, order a St. Germain Spritzer (house-infused orange gin, St. Germain, rose, & soda water).

Chef Jason De Backer’s German background influences an alpine-inspired menu that will delight your taste buds. Chef Jason inherited a full menu of German recipes from his grandmother. He then went on to hone his craft working under the watchful and intensive eyes of any French or Swiss chef he could find. Since then, he has created an elevated and refined menu of traditional cuisine that is authentic to the mountainous regions of Switzerland, Germany, and Austria. The menu is focused; featuring cheese fondue, housemade sausages, and traditional schnitzel. The sausages are made by hand. The cheeses are imported from France. And the Bündnerfleisch tastes distinctly of the Swiss air in which it was dried.

Asparagus Salad – Grilled green and white asparagus with eggs, herbs, & a lemon vinaigrette.
Venison Wienerschnitzel – Breaded and served with German Spaetzle and vegetables topped with a lemon cream caper sauce.
Wurst – Choice of two sausages served with sauerkraut, potatoes, mustard, and gherkins.
Fondue – Gruyere, Emmentaler, garlic, white wine, kirschwasser. Served with bread, apples, sausage, broccoli.
Strudel – Flakey rich pastry filled with fruit and topped with cognac caramel sauce and whipped cream
